Hetty Lui McKinnon's vegetarian take on chicken and sweetcorn soup is packed with protein and high on comfort. Fresh, frozen and canned corn will work in this recipe. Miso adds depth, and blitzing part of the soup makes it thick and creamy, without adding extra ingredients.
Baked frittata with silverbeet and potatoes
Inspired by quiche, frittata and a Spanish tortilla, it's easy to riff on this dish based on what you have in the fridge. Baby spinach can replace the silverbeet, use grated cheddar instead of goats cheese, and swap the dill for parsley.
